black beans & sweet potatoes

i started making this black bean & sweet potato dish during my juice cleanse and i loved it so much i've made it about 3 times since then. its definitely on of my new favorite things to eat. the sweetness of the sweet potato combined with the heat from the jalapeno are a perfect match! who knew black beans and sweet potatoes would go together so deliciously! 


black beans & sweet potatoes (inspired by this recipe)
(makes 4 servings)

ingredients
2 small sweet potatoes, peeled & cubed
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1/8 teaspoon cayenne powder
pinch of salt & pepper
1 teaspoon olive oil
2 cloves of garlic, minced
1 jalepeno, minced
3 cups black beans
1/2 cup chopped cilantro
1 lime, juiced
1 avocado, sliced
1 plum tomato, chopped



step 1: preheat oven to 450 degrees.  toss sweet potatoes with olive oil & spices.  place on a baking sheet and bake for about 25 minutes.


step 2: while the potatoes are baking, mince the garlic (this handy gadget makes it so easy!) and jalapeno (DO NOT touch your face while until you have washed your hands!), chop the cilantro & drain the beans.

step 3:  heat 1 tablespoon olive oil in a large pan.  add garlic & cook until it starts to brown.  add the jalapeno and beans.  cook until the mixture is heated through.


step 4: throw in the cilantro and potatoes into the pan with the beans.  squeeze the lime juice into the mixture. 


step 5:  top with avocado slices and chopped tomatoes.

these beans are great served over brown rice, or as vegetarian soft tacos.  i actually made my own tortillas!  they tasted soo much better than store bought ones, plus no preservatives!  happy monday!

This looks delicious! I've done something similar for a while now, with mashed sweet potatoes - but in enchilada form.
