BLTA salad

between the zero waste thing and the juice cleanse i did in may, the food i'm buying and cooking has changed A LOT.  i'm not sick of quinoa yet, but my bf is, so i've been trying to make things that don't require packaged products and are also relatively healthy.  i decided to re-create the amazing BLTA salad i had a cheeky's in palm springs - with a few small changes!
 

BLTA salad
serves 2

ingredients:
6 slices of bacon - buy from the meat counter so you can get it in your own container!
3-4 handfuls of mache
2 handfuls of cherry tomatoes, halved
1 avocado, cubed
1 garlic clove, minced
2 tablespoons organic mayo - this was store bought, but once i run out i might try making my own!
2 tablespoons white balsamic vinegar
salt
pepper




step 1: cook the bacon so its crispy.  drain on a towel & let cool.  cut the tomatoes and avocado, place in a bowl with the mache.  crumble the bacon and put in the bowl.


step 2: pour the bacon grease out of the pan, keeping about 1 tablespoon in the pan.  heat the bacon grease and add the garlic, then add the mayo & vinegar.  whisk until well combined.  let cool a few minutes and pour onto the salad.  toss to coat.  salt & pepper to taste.  enjoy!


the salad turned out delicious (obviously - it has bacon)!  also - super fast and easy, perfect for a week night dinner!

I just did a juice cleanse and I feel exactly the same way. Nothing makes you more conscious about what you are putting in your body than the way you feel after a week of juiced vegetables.
